Blast chilling rooms · Warsaw and Masovia

Blast chilling rooms: blast chilling and blast freezing

A blast chilling room quickly chills or freezes hot dishes and fresh produce before bacteria can multiply. A typical cycle chills food from +70 to +3 °C in 90 minutes or freezes it to -18 °C in 240 minutes. ColdBack builds custom blast chilling rooms from scratch and services them for restaurants, caterers and food producers in Warsaw and Masovia.

Scope

A blast chilling room sized for your batch, not picked from a catalogue

We size a blast chilling room by how many kilograms you need to chill or freeze and how fast. The condensing unit capacity must cope with the peak at the start of the cycle.

  • Blast chilling

From +70 to +3 °C in about 90 minutes. Safe storage of dishes cooked the day before.

  • Blast freezing

Down to -18 °C at the product core in about 240 minutes. Small ice crystals and better texture after thawing.

  • Custom-built rooms

We build from scratch: a PIR sandwich panel room, condensing unit, evaporators and controls, sized for the client's trolleys and racks.

  • Condensing unit and evaporators

A condensing unit and high-output evaporators matched to batch size and cycle time, with a margin for the peak.

  • Controls and HACCP records

Cycle control with a core temperature probe and a record of each cycle for your documentation.

  • Service and support

Maintenance inspections, evaporator cleaning, F-gas leak checks. Service contract with 24/7 on-call service.

How does a blast chilling room work?

A blast chilling room has a condensing unit and evaporators with much higher capacity than a standard cold room. A strong flow of cold air quickly removes heat from the product, and a probe inserted into the core shows when the food reaches the set temperature. This way the product passes quickly through the temperature range in which bacteria multiply fastest.

What is the difference between blast chilling and blast freezing?

Blast chilling lowers the temperature of food from about +70 to +3 °C in about 90 minutes, and the product then goes into a cold room. Blast freezing lowers the core temperature to -18 °C in about 240 minutes, and the product goes into a freezer room. Many rooms offer both modes.

Blast chilling room or blast chiller cabinet?

A blast chiller cabinet is enough for a few GN containers per cycle. When you chill or freeze whole trolleys or racks, for example in catering or a production plant, a custom-built blast chilling room is the better choice.

Does HACCP require a blast chilling room?

The regulations require rapid chilling of food that is not served straight away, and your HACCP plan must state how you do it. A blast chilling room that records each cycle is the simplest way to meet this requirement and gives you evidence for sanitary inspections.

How much does a blast chilling room cost?

The price depends on batch size, cycle time, mode (chilling, freezing or both) and condensing unit capacity. We always size blast chilling rooms individually. Tell us how many kilograms of what you want to chill or freeze, and we will prepare a quote within 48 hours.
